Oak-aged Cachaça Adds Depth and Smoothness
Cachaça is the distilled essence of sugarcane. Novo Fogo grows theirs carefully in the southern Atlantic Rainforest of Brazil, where the mountains meet the sea. They believe in flavor and respecting the pristine environment that surrounds our organic-certified, zero-waste distillery and sugarcane plantation, in the small town of Morretes. That’s why they harvest our estate-grown sugarcane by hand, which they then press, ferment, distill, rest, age, and bottle on site. Their cachaças are USDA organic certified, 100% natural, and proudly not chill-filtered.
Using small batch distillation in their copper pot still, Novo Fogo takes the heart of the distillation and ages it for 2-3 years in Four Roses bourbon barrels, in the heat and humidity of the Atlantic Rainforest. Before aging the barrels they're disassembled, sanded, reassembled and the toasted to a medium char. This darker, more complex spirit makes a delicious Brazilian Old Fashioned.
Here the aroma is of banana bread, with notes of chocolate, cinnamon bark, and coffee. Nuances of pepper remain, but the cachaça’s time spent in wood changes its pepperiness from fresh red to toasty black pepper.
